Chicken Apple & Gammon Pie

Ingredients
1 Kg pack of frozen pastry (thawed)
5 Boneless skinless chicken breasts
1 Medium onion, peeled & sliced
Few sprigs of thyme, parsley & a few chives
1 Gammon steak, skinned & cubed
1 Cooking apple. Peeled, cored & quartered
2 medium eggs
125gm carton of natural yogurt

Place chicken breasts, onion & herbs in a large pan. Pour over enough cold water to cover. Bring to the boil, cover and simmer gently for 10 min. Add the gammon & simmer for a further 10mins. Strain and cool stock & meat.

Preheat oven, electric 200C, Gas 5. Roll out one block of pastry and line a deep loose based 9inch Flan Tin with rolled out pastry overhanging the edge. Cut the chicken into large dices. Peel core & quarter the apple.

Press & layer chicken, Gammon, onion, herbs & apple into flan tin. Beat egg with yogurt & 4 tablspns of stock. Then pour this mixture over the ingredients in the pie. Roll out the second pastry block enough to form the lid.

Cover with pastry lid. Trim & crimp. Brush with egg. Trim the pastry to decorate. Make a hole in the crust in the centre of the pie. Bake for 35-40 mins or until the pie is brown and cooked. Serve hot or cold.

Baked Bean Casserole

Ingredients
15oz of baked beans
1 onion peeled and finely sliced
14oz of tinned tomatoes
8 rashers of streaky bacon, rind removed
3oz of grated cheddar

Put alternative layers of beans, onion and tomatoes in a greased baking dish. Top with the bacon rashers and sprinkle on the cheese. Pre heat the oven , gas mark 5 or 190 electric.
Bake for 30 mins.

Chunky Marmalade Bread and Butter Pudding

Sardine Fishcakes

Ingredients
1 teaspoon of curry powder
8oz potato, mashed
8oz sardines, mashed
1 tablespoon chopped parsley
1 whole egg plus 1 egg yolk
3oz seasoned flour
3oz breadcrumbs
Oil for frying


Combine the curry powder, potato, sardine and parsley in a bowl. Fold in the egg yolk and refrigerate for ½ hour. Divide the mixture into eight and roll into balls, then flatten into patties. Beat the remaining egg in a flat bowl, dip the fishcakes into seasoned flour, then into the egg, then into the breadcrumbs. Heat a little oil in a frying pan over a medium heat. Cook the patties until golden, about 3 mins each side.

 

Ingredients
6 Slices of white and brown bread
2oz Softened butter
2 tabspns of marmalade
10 fl oz Milk
2½ fl oz Double cream.
3 eggs
3oz Sugar

Topping
Zest of one large orange
1 tabspn Demerara Sugar
Chopped candied peel

Make marmalade Sandwiches then cut into triangles. Place in an ovenproof dish, crust down.
Whisk cream, milk, sugar and eggs together and pour over the triangles.
Cook Gas mark 4, Electric 180C, for 35-40 minutes
